You can't beat a freshly caught piece of tuna, marinaded and then cooked on a charcoal barbecue. If you don't have a barbecue, heat the oven grill to its highest temperature, and grill the fish for about 10 minutes, turning occasionally and basting with the marinade. 1 lb fresh tuna, filleted and cut into 2 pieces | 2 tblsp dark soy sauce |
1 garlic clove, crushed | 1 tblsp cooking oil |
Juice of 1/2 lime | 1 teasp dried chili seeds |
2 teasp grated fresh ginger | 1 teasp sugar |
Place the tuna fillets in a shallow dish. Combine all the other ingredients and pour over the fish, stirring to make sure the fillets are coated thoroughly. Cover the dish,and leave to marinade for a few hours.
Light the barbecue, get up to temperature, and grill the fish for about 10 minutes, turning and basting every so often. Serve with rice and buttered cabbage.
