This is a great way to use up any cooked lamb you might have left over from Sunday lunch.
Serves 2-3 people
Preparation Time: 5 Minutes
|1 cup cooked lamb||1/4 cup raisins|
|2 cups cooked rice||1 tblsp toasted almonds|
|1 medium onion, chopped||2 teasp black pepper|
|1/2 cup frozen peas||2 teasp chili powder|
|1 small red or green pepper, chopped|
Heat a tablespoon of cooking oil in a large frying pan, and fry the onion and red/ green pepper gently until soft. Stir in all the other ingredients and keep stirring until the peas are cooked.
Serve with a few side dishes, such as Tomato Relish or Mango Chutney.
