10 oz.plain flour2 teasp.caster sugar
2 oz.cornflour1 egg
6 oz.butter1 lb.jar mincemeat
Sieve together the plain flour and cornflour. Rub in the butter until the mixture resembles breadcrumbs. Add the caster sugar, beaten egg and a little water, and form into a ball. Cover with clingfilm and leave to chill in the fridge for 30 minutes - this will make rolling out easier. Roll out thinly, and cut into rounds about 3 inches in diameter.
Place rounds straight into the fairy cake tray(must be non-stick), and drop a teaspoon of mincemeat in each round. brush a little water round the edges of the pastry rounds. Cover each pie with another round of dough, press lightly round the edges to make a seal, prick the top with a fork to allow the steam to escape, and bake in a hot oven for 15 minutes. When cool, sieve a little icing sugar over the top of the pies.
