Conch is one of the most messy and difficult ingredients to prepare when caught from fresh, so if you can get hold of conch already cleaned and ready to use, you will be saving yourself a lot of grief. If you have caught your conch yourself and cleaned it, well done you! It will probably also taste so much better knowing all the hard work you put into its preparation. White meat from 1 medium conch | Chopped celery |
Chopped onion | 1 teasp sugar |
Chopped red pepper | Juice of 2 large limes |
Chopped green pepper |
Chop the conch meat into tiny pieces, and place in a glass or plastic bowl. Add enough chopped raw vegetables from the above list to equal the amount of conch.
Add the rest of the ingredients, mix well, cover, and leave to marinade for a couple of hours or overnight.
Serve with hot pepper sauce and tortilla chips.
