These little bhajis could be served as a starter for a curry, or just as nibbles with a drink at sundown.
SERVES 4 Preparation Time: 5 Minutes |
1 large onion, chopped into thin strips | 1 teasp cumin |
2 tblsp split pea flour | 1 teasp curry powder |
1 teasp turmeric | Pinch of salt |
Mix the spices with the flour. Add a little water until the mixture is gluey, then stir in the chopped onion and salt. Pour a glug of cooking oil into a medium frying pan to a depth of 1/4 inch and heat until moderately hot. Drop in ping-pong sized balls and cook gently for about 5 minutes on each side, until golden brown. Add more cooking oil if required.
Serve on a bed of shredded iceberg lettuce, accompanied by side dishes of mint raita, mango chutney and a squeeze of lemon.
