This recipe is thanks to Roz and Gary, our land-based friends in Grenada. We were invited for dinner to their apartment in Secret Harbour, and treated to the sort of hospitality only people who live ashore can provide. The fridge seemed to hold a never-ending supply of cold beer and ice cubes, the drinks cupboard was larger than my entire galley, and the showers were out of this world!

1 small onion, finely chopped | 1/2 cup evaporated milk |
1 cup grated cheese | Dash of hot pepper sauce |
1 tblsp cooking oil | |
Heat the oil in a small saucepan, and gently fry the onion until soft but not browned. Add the evaporated milk and heat through. Add the grated cheese and hot pepper sauce, and stir until the cheese has melted in, and you have a wonderfully creamy-looking sauce. Pour into as small dish, and serve with plain crackers or sticks of raw vegetables such as carrots, cucumber, green pepper, etc.
