Tortillas can be used in a number of recipes - as a base for enchiladas, huevos rancheros, fajitas, etc. They are very easy to make, as long as you have some flour, cooking oil and water. If you don't have any of these, it's time to go shopping!

1 cup flour | 1 tblsp cooking oil |
A little water to mix |
Mix the above ingredients in a small mixing bowl, adding enough water until a dough is formed and the sides of the bowl come clean. Divide the dough into 4 or 5 balls, and roll each out on a floured board as thinly as possible.
Heat a small non-stick frying pan (don't add any oil) and dry-fry one tortilla at a time. Turn the tortilla over when it begins to puff up and the other side has dried out enough to form a few brown spots. Stack the tortillas wrapped in a tea towel to keep them soft until ready to use.
