Tuna in Peanut Sauce

Lovely Meal

Tuna is quite a firm fish and stands up well to being cooked in a creamy peanut sauce. I make this dish in a large deep sided frying pan on the stove top, adding as many fillets of tuna as required for the number of people who will be eating.

 

SERVES 4

Preparation Time:  5 Minutes
Cooking Time: 10 mins + 20 mins for the sauce

 1 pint Peanut Sauce  
 4 fillets of the very freshest tuna  
   

Make the Peanut Sauce in a large deep sided frying pan, adding more water if the sauce becomes too thick. Add the fillets of tuna and cover with the sauce. Simmer gently until the fish is cooked - it should flake easily when touched with a fork.

Serve with rice and some pickled vegetables.
