This is such a simple recipe and yet tastes absolutely delicious.
Preparation Time: 10 Minutes
|2 chicken fillets||1 chicken stock cube|
|1 onion, chopped||1 cup breadcrumbs|
|1 tin Campbells chicken & mushroom soup||1 cup crushed crackers (Ritz)|
|2 cloves garlic,crushed||1/2 cup grated Parmesan|
Cut the chicken into bite-size pieces and gently fry with the onion until browned all over. Add the soup, garlic and stock cube and heat - add a little water if the mixture is too dry.
Turn into an oven-proof dish. Mix together the breadcrumbs, crackers and Parmesan and sprinkle over the top. Bake in the oven at 190 degrees C/375 degrees F for 25 minutes or until the crust has nicely browned.
Serve with mashed potatoes and broccoli.
