This is a Mexican recipe, using dark chocolate and red chillies to make the Mole sauce.
Preparation Time: 15 Minutes
|4 large chicken thighs,skinned||4 tblsp salsa|
|1 large onion, peeled and chopped||1 tblsp sugar|
|1 tin chopped tomatoes||1 tblsp cumin|
|4 cloves garlic,crushed||2 dried red chillies, crumbled|
|1 chicken stock cube||4 oz dark chocolate|
In a large saucepan, heat a tablespoon of cooking oil, and gently fry the onions and chicken thighs until browned all over.
Crumble in the stock cube and add 1/2 pint hot water. Add all the other ingredients apart from the chocolate, and stir well. Cover and simmer gently for about 1/2 hour or until the chicken is cooked through.
Break the chocolate into small pieces and add to the pan. Stir gently until the chocolate has dissolved. The chicken should now be coated with a thick, creamy sauce. Add more chocolate or hot pepper sauce to suit your taste.
Serve with rice, sour cream, avocado, tortilla chips........
