|2 medium potatoes, peeled and grated||4 eggs|
|1 large onion, peeled and chopped|
|8 oz cooked roast beef, or cooked smoked ham, chopped into pieces|
|4 oz Swiss cheese, grated (optional)|
Heat a tablespoon of oil in a large frying pan and fry the onions until golden. Add the grated potato and mix with the onion. Flatten the mixture down with the spatula and continue to fry, turning occasionally until the potato starts to brown.
Add the cooked meat. Again, flatten it all down, and turn occasionally until the whole mixture is browned and the potato is cooked through - add more cooking oil if the mixture begins to stick.
If you are including cheese in the recipe, sprinkle this on top before removing from the heat. Divide the rosti into 2 portions, and serve each with 2 fried eggs on top, and a few pickled gherkins.
