Sweet And Sour Spare Ribs
This recipe was taken and adapted from a cookery book produced by Marks & Spencer back in the 1980s. it might be old, but it's still a good 'un!
Preparation time : 10 minutes
Cooking time : 2 hours in oven2-3 people
2 lbs. pork ribs2 tblsp.tomato puree
1 large onion, chopped2 tblsp.soy sauce
1 pint water1 tblsp.sugar
1 chicken stock cube1 tblsp.honey
2 garlic cloves, crushedjuice of 1 lemon
cooking oil1 tblsp.worcester sauce
Cut ribs into individual ribs, place in a roasting pan, sprinkle with salt and pour over a little cooking oil. Roast in a fairly hot oven for 30 minutes. Meanwhile, make the sauce as follows. In a medium saucepan, heat a tablespoon of cooking oil and gently fry the onions and garlic until soft but not browned. Add the rest of the ingredients and heat through gently.
Remove the ribs from the oven and pour the sauce over. Cover the roasting pan with tin foil, and return to the oven to cook for a further hour and a half. If the sauce is too thin, mix a teaspoon of cornflour with a little water, and stir in. Return to the oven for a few more minutes.
Serve with boiled rice and crispy fried cabbage.
